We were kindly allowed to test the Pro X next to the Fellow Stagg at Norange in Copenhagen, and not only did we test it thouroughly ourselves, but the baristas took turns in testing both kettles next to each other. It garnered unanimous praise!

Filling the Fish Pro X and setting it on its base immediately reveals how far smart kettle tech has come. The 1350W heating core brings a full 900ml vessel to boiling temperature blisteringly fast—leaving old-school 1000W kettles far behind in the dust. Setting temperatures on the Grooveboard panel feels silky smooth, allowing you to slide across values or tap for precise half-degree adjustments.

When you lift the kettle and begin your pour, the balance is astonishingly good. The cutaway handle with its wooden thumb rest provides a natural groove for your thumb, giving you total control over your pour. Where the Fish Pro X truly embarrasses heavyweights like the Fellow Stagg EKG is in its delicate low-flow capabilities. You can tilt the body to execute an insanely soft, micro-fine 1g per second drizzle that floats onto the coffee bed without breaking slurry structure or disturbing fine grounds. This is absolutely perfect for those expensive Peru Gesha, or beautiful Ethiopian ALO coffees that require a ghost-like touch.

It gives you a level of gentle control that makes the Stagg feel noticeably stiff and prone to sudden flow breaks by comparison. The weight or overall balance of the Pro X leans itself better to gentler pours than the Stagg, which can tip or trickle with the slightest adjustment.

The Positives

The Negatives

• When attempting an ultra-low close pour right near the coffee bed, the outward curve of the gooseneck spout can physically hit the rim of narrow drippers like a V60 or Kalita.

• The touch-sensitive base plate can register accidental inputs if you splash water directly onto the glass panel before locking your settings.

• While the ergonomic handle is exceptionally comfortable for right-handed brewing, left-handed baristas will find the contoured wooden thumb rest less natural in the hand.
