An Interview With Fu Shou Noodle Club

PORK SALVATION IN UBUD

Food is in abundance on the balmy island of Bali. Everywhere you look is a new bakery or organic restaurant vying for your manifested dollars. People flood in from far and wide for a taste of the healthy life, whilst waking up early for yoga or doing breath-work as the sun sinks behind bliss.

However, sometimes in life you need a break from the routine, and hidden in the plethora of options in Ubud (and now a new branch in Kuta), is the humble noodle shop FU SHOU NOODLE CLUB. Let's rewind a few years, pre-pandemic. Having positioned a tired posterior at the bar My Neighbor, the bartender had a few moments free to reply to the most pressing concerns: "Where should I eat in Ubud". Without a seconds hesitation, the answer was "Fu Shou Noodle Club".

Notes were taken, google map pins dropped and early the next midday the roaring scooter headed out for noodle salvation. After driving past the location twice (in the old spot), it was finally found and a cheery owner welcomed the hungry in with care and warmth, offering tips on what to order before disappearing into the kitchen to fascilitate our dreams.

Barely a few minutes later, the feast arrived. Simple, homecooked noodles, the perfect texture, soups to satisfy the craving for comfort, and a price to put a smile on the thriftiest bastard. Fu Shou was visited by all and sundry on multiple visits, preached like fiery gospel to friends who sent back glowing reports, and during the first baby steps of The Mouth, a few questions were sent to the owner to gain a bit more insight into his restaurant, and perhaps help promote this wonderful place a bit more.

Here below are ten short questions and answers sent from Bali via Instagram chat!

Enjoy, and please head there if you are ever in Indonesia. Here is a direct link to the
Ubud branch, and the new Kuta branch!

Can you tell us about the history and inspiration behind the creation of Fu Shu Noodle Club?

The inspiration of Fu Shou comes from all of my childhood memories. From the noodles, the foods, drinks, art, music, the poster on the wall, color and vibe. Recall from all of what ive seen when i was kid is not that difficult because its never forgotten.

And why i choose noodles, its simply i missing that food. it’s quite difficult to find it here in Bali especially Ubud.

What makes the noodles at Fu Shu Noodle Club unique and different from other noodle places in Ubud? Do you have some secret family recipe or techniques that you use?

We are the first who sell Chewy Noodle (Bakmi Karet) in Bali. Yes we use our mom recipe for most of all the food. The secret is no secret, we cook from our heart to served the best as we can 😊

Are there any traditional or regional influences in the noodle recipes?

There are no specific regional influences, as a Chinese Indonesian we influenced by a lot of culture and tradition.

Where do you source your ingredients from? Do you try to use locally produced products?

Yes we use locally meat, vegetables except some of the particular sauces.

For a new customer, what would you recommend them to order to get a good overview of your food.

Of course they should try our Bakmi Karet Komplit (our signature and best seller - Homemade chewy noodles with free-range chicken, pork belly, charsiu pork, fried lard and fried meatballs. Yes that’s a lot of meat on your bowl ☺️

What are some of your personal culinary heros? Chefs that you admire or are inspired by?

Hmm i lot of seeing my mom cooking as she always cook for us all the time. She is like can make everything and taste amazing (at least for her family)
