THEY COME FOR THE FUNK

One block from the famous Assistens Cemetery, Saftig occupies a tiny basement area on the same street as Rondo Bakery. A brightly coloured cafe run by a wildly passionate owner, this micro-roaster is attempting to make his imprint in the crowded Copenhagen scene.


Roasting duties take place in the backroom on a Bullet, much like Pontes and The Artisan. This small roasting machine is ideal for cafes that don't need to roast commercial amounts every month.

In terms of coffee, the profile here is very much funky and intense. Naturals and Anaerobics are favourites, with a small selection of baked goods and a few seats around the perimeters.

The batch-brew is via the Orea dripper, espresso's on the manual machine, and everything is juicy and bright like the name suggests (Saftig literally means juicy in Danish).

It seems the neighborhood have opened their arms to Saftig, and I think it's great to see new roasters living true to their coffee-losophy, branching out in areas they want to corner, and seeing that they find a flock willing to go with them.

The coffee world is so open and endless to variations and interpretations, so it's important that individuals find their lane and go full blast.
